Bluefin tuna spoon, Asian-style tartare, crispy goma wakame seaweed.
Sun-dried tomato tiramisu verrine, Mediterranean crunch.

Cold Starter
Saint-Jacques carpaccio, yuzu gel, pickled radish, freeze-dried mango shards, basil balsamic.
Hot Starter
White and green asparagus in textures, creamy asparagus broth, mimosa egg cream, homemade furikake and Caspian oscietra caviar.
Main Course
Roasted rack of lamb with rosemary, glazed with honey and wholegrain mustard.
Roasted sweet potatoes & seasonal root vegetables and rich herb lamb jus.
